Job Overview
We are a food and beverage company specialising in authentic North Indian cuisine, with multiple outlets. We are seeking a highly skilled and detail-oriented Chaat Master who understands that chaat preparation is extremely taste-sensitive and requires precision, consistency, and strong product knowledge. This role is critical in maintaining our flavour standards and delivering a consistent customer experience across all outlets.
Key Responsibilities
- Prepare a full range of North Indian chaat items (e.g. pani puri, bhel puri, sev puri, papdi chaat, aloo tikki) with strict adherence to taste and quality standards
Morning Shift (Preparation of Bases & Components):
- Prepare all base components fresh daily, including puri, papdi, tikki, and other foundational items
- Prepare chutneys, spice mixes, fillings, and garnishes to exact recipes and flavour profiles
- Ensure all ingredients are properly measured, prepped, and stored to maintain freshness and consistency
- Conduct taste checks during preparation to ensure correct flavour balance before service
Second Half (Final Assembly & Service):
- Assemble chaat items to order with precise control over taste, texture, and presentation
- Accurately balance sweet, tangy, spicy, and savoury elements in every serving
- Ensure all condiments and accompaniments are applied in correct proportions
- Perform continuous taste checks during service and adjust seasoning where required
General Responsibilities:
- Maintain strict consistency in recipes, portioning, and preparation methods across all servings
- Monitor ingredient quality, storage, and handling to prevent any compromise in taste
- Uphold high standards of hygiene, food safety, and cleanliness at all times
- Train and guide junior staff to follow exact preparation and taste standards
- Coordinate with the kitchen team to ensure smooth daily operations
Requirements
- Minimum 3 years of experience working as a Chaat Master or in a similar role specialising in North Indian cuisine
- Strong expertise in preparing chaat bases (puri, papdi, tikki), chutneys, spice blends, and all condiments
- Proven ability to manage and control taste consistency in a highly taste-sensitive environment
- High attention to detail, especially in flavour balancing and portion control
- Good understanding of food hygiene and safety standards
- Ability to work efficiently in a fast-paced environment
- Team player with a disciplined and responsible approach
Preferred Qualifications
- Experience in multi-outlet or central kitchen operations
- Ability to standardise recipes and maintain consistency across locations
