Food Production Supervisor

Supervise and coordinate daily food production activities in the central kitchen.

Plan production quantities according to outlet orders and operational requirements.

Assign daily duties and monitor the work performance of production staff.

Ensure food products are prepared according to company recipes, specifications, portion sizes and quality standards.

Monitor production schedules to ensure orders are completed accurately and on time.

Conduct quality checks on raw materials, work-in-progress and finished food products.

Ensure proper food handling, hygiene, sanitation and workplace safety procedures are followed.

Monitor raw material usage, stock levels, expiry dates and inventory movement.

Implement proper FIFO/FEFO stock rotation and minimise food wastage.

Coordinate the packing, labelling and preparation of finished products for distribution to outlets.

Check production records, stock records, wastage reports and other operational documentation.

Train and guide production staff on SOPs, food preparation methods and quality requirements.

Identify production or quality issues and take appropriate corrective action.

Coordinate with purchasing, warehouse, delivery and outlet teams to ensure smooth operations.

Monitor kitchen equipment and report maintenance or repair requirements.

Assist management in improving production efficiency, manpower utilisation and cost control.

Ensure staff comply with company policies, operational procedures and management instructions.

Report production performance, manpower issues, stock discrepancies and operational problems to management.
