We are looking for an Assistant Director of Food & Beverage to join our team!
Job Responsibilities
- Support the Director of Food & Beverage in developing and executing the overall Food & Beverage strategy, driving operational excellence, profitability, and exceptional guest experiences across all outlets and event venues.
- Serve as the second-in-command of the Food & Beverage Division, providing strong leadership and operational oversight in the absence of the Director of Food & Beverage.
- Lead and oversee all Food & Beverage operations, including restaurants, bars, lounges, in-room dining, and banqueting, ensuring the highest standards of luxury hospitality and service excellence.
- Drive commercial performance through strategic revenue optimisation, outlet positioning, menu engineering, cost management initiatives, and financial discipline.
- Develop and implement annual business plans, budgets, forecasts, and performance targets to achieve departmental and organisational objectives.
- Collaborate closely with Culinary, Sales & Marketing, Events, and other key stakeholders to create innovative dining concepts, revenue-generating initiatives, and memorable guest experiences.
- Analyse business performance, market trends, guest insights, and competitive developments to identify opportunities for growth, operational enhancements, and market leadership.
- Lead the successful execution of large-scale conferences, weddings, VIP functions, and signature hotel events, ensuring flawless service delivery and operational excellence.
- Champion a guest-centric culture by continuously elevating luxury service standards, strengthening brand reputation, and driving guest satisfaction and loyalty.
- Build, lead, and inspire a high-performing Food & Beverage management team through coaching, mentoring, performance management, and leadership development.
- Ensure full compliance with all food safety, hygiene, licensing, workplace safety, and Shangri-La operational standards while promoting a culture of accountability and continuous improvement.
Job Requirements
- Minimum 12 years of progressive Food & Beverage leadership experience, including significant experience at Assistant Director of Food & Beverage level or an equivalent senior management role within an international luxury hotel.
- Bachelor's Degree in Hospitality Management, Hotel Management, Business Administration, or a related discipline preferred
- Proven track record of successfully leading complex, high-volume, multi-outlet Food & Beverage operations, including restaurants, bars, lounges, in-room dining, and large-scale banqueting.
- Strong commercial and financial acumen with demonstrated success in driving revenue growth, profit optimisation, budgeting, forecasting, cost control, and business performance.
- Strategic leader with the ability to translate business objectives into actionable operational plans while balancing guest satisfaction, people development, and financial performance.
- Exceptional leadership presence with a proven ability to inspire, influence, develop, and retain high-performing teams and future leaders.
- Extensive knowledge of luxury Food & Beverage operations, guest experience management, culinary trends, service excellence, and industry best practices.
- Strong stakeholder management and communication skills, with the ability to collaborate effectively with Executive Committee members, department heads, owners, and external partners.
- Experience with internationally recognised luxury hospitality brands and the operational experience to support one of Singapore's largest and most diverse hotel Food & Beverage operations.
