The Indian Senior Chef is responsible for overseeing the preparation and cooking of Indian cuisine, ensuring that all dishes are prepared according to the company’s recipes, quality standards, and food safety requirements. The Senior Chef will supervise kitchen staff, manage daily food preparation, and ensure smooth kitchen operations.

Key Duties and Responsibilities

  • Prepare and cook a variety of Indian dishes, including North Indian and South Indian cuisine.
  • Prepare curries, biryani, gravies, vegetables, rice dishes, breads, marinades, and other Indian specialties.
  • Ensure all food is prepared consistently according to established recipes and portion standards.
  • Supervise and guide junior chefs, cooks, kitchen assistants, and other kitchen staff.
  • Allocate daily kitchen duties and monitor staff performance.
  • Check the quality, freshness, and quantity of ingredients before food preparation.
  • Assist with menu planning and development of new Indian dishes where required.
  • Monitor food preparation and cooking processes to ensure food quality and consistency.
  • Ensure proper storage, handling, labelling, and rotation of food ingredients.
  • Maintain cleanliness and hygiene of the kitchen, cooking equipment, utensils, and food preparation areas.
  • Ensure compliance with Singapore food safety, hygiene, and workplace safety requirements.
  • Monitor stock levels and inform the management when ingredients or supplies need to be replenished.
  • Minimise food wastage and ensure proper portion control.
  • Assist in preparing food for large-scale catering, buffet functions, corporate events, and daily operations when required.
  • Coordinate with the kitchen team to ensure food is prepared and served on time.
  • Check the taste, presentation, temperature, and overall quality of food before serving.
  • Train junior kitchen staff in Indian cooking methods, food preparation, hygiene, and kitchen procedures.
  • Assist the Head Chef or Kitchen Manager with daily kitchen operations.
  • Perform other duties related to kitchen operations as assigned by management.

Skills and Requirements

  • Relevant experience as an Indian Chef or Senior Chef.
  • Good knowledge of Indian cooking techniques, ingredients, spices, and recipes.
  • Ability to prepare food in large quantities while maintaining consistent quality.
  • Good knowledge of food hygiene and kitchen safety practices.
  • Ability to supervise and train junior kitchen staff.
  • Able to work in a fast-paced kitchen environment.
  • Able to work independently and as part of a team.
  • Willing to work shifts, weekends, and public holidays where required.
  • Good organisational and time-management skills.
