ALORE is a contemporary dining and lifestyle destination located at Circular Road, offering a vibrant combination of food, drinks, music and entertainment. Our menu focuses primarily on Western and American-inspired cuisine, including pizzas, burgers, pastas, grills, sharing plates and bar bites.

We are looking for an experienced and hands-on Senior Sous Chef to join our culinary team and support the Head Chef in managing day-to-day kitchen operations.

Key Responsibilities

• Assist the Head Chef in overseeing the overall daily operation of the kitchen.

• Supervise and guide Sous Chefs, Chef de Parties, Commis Chefs and kitchen assistants during preparation and service.

• Ensure consistent food quality, presentation, portioning and taste according to ALORE's standards.

• Take an active, hands-on role during busy lunch, dinner and event services.

• Prepare and supervise Western and American-inspired dishes including pizzas, burgers, pastas, grills, sauces, appetisers and bar bites.

• Ensure proper mise en place and readiness of all kitchen stations before service.

• Monitor food preparation, cooking procedures and plating standards.

• Assist with menu development, new dish creation, recipe standardisation and food costing.

• Monitor food inventory, stock rotation, ordering and wastage to maintain effective food-cost control.

• Ensure proper storage, labelling and handling of ingredients.

• Maintain high standards of kitchen cleanliness, hygiene and food safety.

• Ensure compliance with Singapore food safety and hygiene requirements.

• Train, mentor and supervise junior kitchen team members.

• Assist with kitchen staff scheduling and allocation of duties.

• Coordinate closely with the Front-of-House and Bar teams to ensure smooth service.

• Take charge of kitchen operations in the absence of the Head Chef.

Requirements

• Minimum 5 years of relevant professional kitchen experience, preferably within restaurants, hotels, gastro bars or similar high-volume dining establishments.

• Prior experience as a Sous Chef, Senior Sous Chef or equivalent supervisory kitchen position preferred.

• Strong knowledge of Western cuisine, particularly pizzas, burgers, pastas, grills, appetisers and contemporary bar food.

• Good understanding of kitchen operations, food costing, inventory management, portion control and waste management.

• Strong leadership skills with the ability to train and motivate a multicultural kitchen team.

• Able to maintain consistency and quality during high-volume service periods.

• Hands-on, organised and able to work effectively under pressure.

• Good understanding of food hygiene, sanitation and kitchen safety practices.

• Willing to work shifts, weekends and public holidays according to operational requirements.
