PASTRY CHEF – INDIAN & TURKISH DESSERTS
Roles & Responsibilities
We are looking for a creative and experienced Pastry Chef with strong knowledge of Indian and Turkish / Middle Eastern desserts to join our culinary team.
The successful candidate will be responsible for developing and producing high-quality traditional and modern desserts while introducing creative presentation suitable for a restaurant and café environment.
Key Responsibilities
Prepare and produce a wide variety of Indian, Turkish and Middle Eastern desserts, pastries and baked products.
Prepare Indian desserts such as Gulab Jamun, Rasmalai, Kulfi, Jalebi, Kheer, Gajar Halwa and other traditional sweets.
Prepare Turkish and Middle Eastern desserts such as Baklava, Kunafa/Künefe, Turkish Delight, Turkish Rice Pudding and pistachio-based desserts.
Develop modern fusion desserts combining Indian, Turkish, Middle Eastern and contemporary pastry techniques.
Create new signature desserts suitable for restaurant service, café concepts and special events.
Conduct recipe testing and continuously improve existing dessert recipes.
Standardise recipes, preparation methods, portion sizes and presentation.
Ensure consistency in taste, texture, appearance and presentation.
Produce attractive plated desserts suitable for premium restaurant presentation and social media.
Prepare desserts for daily restaurant operations, functions, catering and special events.
Monitor ingredient quality and ensure proper storage, labelling and stock rotation.
Control food costs, portion sizes and ingredient wastage.
Maintain adequate inventory of pastry and dessert ingredients.
Ensure pastry equipment, utensils and workstations are properly maintained.
Maintain high standards of cleanliness, food hygiene and kitchen safety.
Work closely with the Head Chef and Management on new dessert menu development and seasonal launches.
Train and guide junior kitchen staff on pastry and dessert preparation when required.
Perform other kitchen duties as assigned by Management.
Requirements
Minimum 2 years of relevant experience in pastry, bakery or dessert production.
Strong practical knowledge of Indian desserts and/or Turkish/Middle Eastern desserts.
Candidates with experience in both Indian and Turkish/Middle Eastern desserts will be highly preferred.
Good knowledge of pastry techniques, baking, chocolate, creams, sauces and dessert presentation.
Experience in menu development and recipe creation is an advantage.
Creative with a strong eye for modern dessert presentation.
Able to maintain consistent quality in a fast-paced restaurant environment.
Good understanding of food hygiene, food safety and kitchen sanitation.
Able to work independently and as part of a multicultural culinary team.
Able to work shifts, weekends and public holidays when required.
