Chef – Japanese Fine Dining (Omakase / Sushi)

Our client is an established premium Japanese fine-dining restaurant renowned for its exceptional dining experience and commitment to culinary craftsmanship. They are seeking an accomplished Chef with strong Japanese fine-dining expertise to join their culinary team.
- Prepare and present premium Japanese cuisine to consistently high culinary and presentation standards.
- Handle and prepare premium seafood and seasonal ingredients with precision.
- Demonstrate strong knife skills and advanced food preparation techniques.
- Prepare sushi, sashimi and other Japanese dishes according to established standards.
- Support and execute omakase lunch and dinner services.
- Maintain consistency in taste, presentation, portioning and overall food quality.
- Assess the quality and freshness of ingredients and ensure proper handling and storage.
- Maintain strict food safety, hygiene and kitchen cleanliness standards.
- Manage food preparation and mise en place to ensure smooth daily operations.
- Monitor inventory, ingredient usage and food wastage.
- Work closely with the culinary and service teams to deliver a seamless fine-dining experience.
- Interact professionally with guests during counter service where required, including presenting and explaining dishes.
- Support the training and guidance of junior culinary team members where required.
- Perform other responsibilities necessary for the smooth operation of the kitchen.
Requirements:
- Extensive culinary experience specialising in Japanese cuisine, preferably within premium Japanese fine dining, sushi or omakase restaurants.
- Strong experience in sushi, sashimi, seafood preparation and Japanese culinary techniques.
- Excellent knife skills and knowledge of premium and seasonal Japanese ingredients.
- Experience providing counter-style omakase service and interacting directly with guests would be highly advantageous.
- Strong commitment to culinary quality, consistency and presentation.
- Able to maintain high standards in a demanding fine-dining environment.
- Good understanding of food safety and kitchen hygiene requirements.
- Food Safety/Basic Food Hygiene certification required
- Able to work shifts, including evenings and public holidays where operationally required.
- Ability to guide and support junior culinary team members would be advantageous.
Working Schedule
- Shift-based schedule from Monday to Saturday.
- Restaurant operates for lunch and dinner service.
- Closed on Sundays.
- Kitchen preparation and closing duties may be required before and after restaurant service hours.
- Actual working hours and rest days will be based on the operational roster.
- Work location: Central Area
