Sommelier | Pre-Opening!

Introduction:

We are preparing to launch an exciting new restaurant in Dempsey and are looking for passionate wine professionals to join our founding team. Whether you are an emerging sommelier looking to develop your craft or an experienced wine leader ready to shape a world-class beverage programme, we would love to hear from you.

We are currently hiring for Head Sommelier, Assistant Head Sommelier, Sommelier, and Junior Sommelier positions. As part of the team, you will play a key role in creating exceptional guest experiences through thoughtful wine recommendations, impeccable service, and a deep understanding of our beverage programme.

Responsibilities will vary depending on experience and position level.

Key Responsibilities:

• Deliver exceptional wine and beverage service, ensuring a consistently high standard of guest experience.

• Provide thoughtful wine recommendations based on guests' preferences and menu selections.

• Present, open, decant, and serve wines with confidence and professionalism.

• Create memorable dining experiences through beverage storytelling and genuine hospitality.

• Maintain comprehensive knowledge of the wine list, producers, regions, vintages, and styles.

• Participate in ongoing wine education and tasting sessions led by our Wine Director, Roberto Duran.

• Confidently share wine knowledge with guests and team members.

• Assist with receiving, storing, and organising wine inventory.

• Maintain accurate stock records and inventory controls, including regular stock counts and audits.

• Support cellar management, stock rotation, and overall inventory accuracy.

• Work closely with restaurant management and service teams to ensure smooth beverage operations.

• Contribute to a positive, professional, and high-performing workplace culture.

• Support team training and development initiatives.

Leadership Responsibilities:

• Mentor and develop junior members of the sommelier team.

• Support the daily management and operations of the beverage programme.

• Assist with wine purchasing, supplier relationships, and wine list development.

• Drive beverage sales performance and profitability.

• Uphold service excellence and operational consistency.

Head Sommelier Responsibilities:

• Lead the overall wine programme and beverage strategy.

• Curate and maintain an exciting and well-balanced wine list.

• Manage purchasing budgets and supplier partnerships.

• Develop wine pairings and bespoke guest experiences.

• Lead recruitment, training, and performance management for the sommelier team.

Requirements:

• Passion for wine, hospitality, and delivering exceptional guest experiences.

• Previous experience in a restaurant, luxury hospitality, or fine dining environment is preferred.

• Strong communication and interpersonal skills.

• Mandarin proficiency is highly advantageous, given our diverse clientele.

• CMS, or equivalent wine qualifications are advantageous.

• CMS certification, or equivalent qualifications will be highly regarded for Head Sommelier candidates.

• Strong attention to detail, professionalism, and a genuine desire to continuously develop wine knowledge.

• Ability to work collaboratively in a fast-paced and high-performing restaurant environment.

Selection Process:

All shortlisted candidates will have a formal interview with Roberto Duran (MS Sommelier), our Wine Director, during which a test assessment will be conducted to determine their current level of wine competency and the most suitable role for them.
