About Dough & Grain

Dough & Grain is a modern bakery offering freshly baked breads, pastries and quality baked products. We are looking for a passionate and responsible Baker to join our team and support our daily bakery production.

Responsibilities:

1. Bakery Production

• Prepare and produce breads, pastries and other bakery products according to company recipes and standards.
• Measure, mix, knead, shape, proof and bake dough and pastry products.
• Follow recipes, production schedules and standard operating procedures (SOPs) accurately.
• Ensure all products are consistently prepared according to quality and presentation standards.
• Assist with preparation of fillings, toppings, creams and other bakery ingredients.

2. Product Quality Control

• Monitor dough consistency, proofing, baking time and product appearance.
• Check the quality, freshness and appearance of finished products.
• Ensure products meet the required taste, texture, size and presentation standards.
• Identify and report any quality issues to the Head Baker or Supervisor.

3. Food Safety & Hygiene

• Maintain high standards of personal hygiene and food safety at all times.
• Follow proper food handling, storage and temperature control procedures.
• Ensure workstations, baking equipment and production areas are kept clean and hygienic.
• Follow company food safety and hygiene SOPs.
• Minimise food wastage through proper preparation, storage and handling.

4. Inventory & Ingredient Management

• Assist with receiving, checking and storing bakery ingredients.
• Monitor ingredient usage and inform the supervisor when stock levels are low.
• Ensure ingredients are properly labelled, dated and stored.
• Follow FIFO (First In, First Out) practices.
• Assist with daily stock counts when required.

5. Equipment & Workplace Safety

• Operate ovens, mixers, proofers and other bakery equipment safely and correctly.
• Perform basic cleaning and maintenance of bakery equipment.
• Report equipment faults or safety issues promptly.
• Follow workplace health and safety procedures.

6. Production Planning

• Follow daily production requirements and prepare products according to business needs.
• Ensure sufficient quantities of products are prepared for daily sales.
• Support preparation for weekends, promotions, festive periods and special orders.
• Work efficiently during peak production periods.

7. Teamwork

• Work closely with the bakery and outlet teams to ensure smooth operations.
• Support other team members when required.
• Communicate effectively with the Head Baker and Supervisor.
• Maintain a positive, professional and cooperative working environment.

Requirements:

• Minimum 1 year of bakery or pastry experience preferred.
• Candidates with relevant F&B or culinary experience may also be considered.
• Knowledge of bread, pastry and basic baking techniques.
• Able to follow recipes and production instructions accurately.
• Good understanding of food safety and hygiene practices.
• Able to work independently as well as in a team.
• Responsible, disciplined and detail-oriented.
• Physically fit and comfortable standing for extended periods.
• Able to work in a fast-paced bakery production environment.
• Willing to work shifts, weekends and public holidays when required.
• Food Hygiene Certificate is an advantage.
